Feeling like a little snack? Take a pack of bettr to the kitchen and get the ball rolling. In this case – literally because we’ve come up with a fantastic bite- size recipe with our favorite bettr chili chips, perfect for a lighter spring diet.
We’ve combined the earthy flavour of the cauliflower with some tongue- tingling spices and a delicious coconut crust to top it off. Very easy to make, vegetarian (or vegan, depending on your preferences) whatever floats your boat), but most of all very delicious.
- 1 cauliflower (medium size)
- 1 pack bettr chili chips
- 2 eggs /or 4 tbsp table spoons soaked chia
- 1 tbsp lemon juice
- 1 tsp turmeric
- 1 tbsp chopped lemongrass
- 2 tbsp French mustard
- 1 tbsp olive or coconut oil
- Black pepper
How to make them:
Finely chop the cauliflower in a blender or any similar device. Put the salt in and leave it in a very thin cloth for 30 min and hang it somewhere so the excess water drains out. Squeeze the extra water out and put the cauliflower mixture in a deep dish. Add the rest of the ingredients and mix it them all together.
Using your hands, make small balls from the cauliflower mixture. Crush the chips so it’s not chunky but also not too fine. Generously cover each ball with the crushed bettr coconut chilli chips. It will stick!Put in a pre-heated oven (around 180°C) and bake for approx. 20 min.
Enjoy them fresh out of the oven or the day after with a spicy saucе or on their own.
